Food packaged in a protective atmosphere must be checked continuously or randomly as part of quality  monitoring. Oxygen and carbon dioxide lead to discoloration and loss of quality in food, which can lead to expensive complaints

and returns.
 

Regular or even continuous checking of the MAP packaging is therefore more than recommended.

What is MAP packaging?

 

The label "Protected atmosphere packaged" can be found on almost every film packaging in the food trade today. Protective atmospheres are used to prevent the loss of freshness and quality. In so-called MAP packaging, the normal air atmosphere is exchanged for a protective atmosphere made up of gases. By exchanging the atmosphere, the quality of the food is preserved and the shelf life is improved. 

Which gases are used?

Carbon dioxide - strong against microorganisms

The growth of most microorganisms such as mold and the most common aerobic bacteria is strongly influenced and prevented by carbon dioxide. Carbon dioxide inhibits microbial activity because it dissolves particularly well in the liquid and fat phase of the food and thus lowers the pH value.

 

Nitrogen - inert and stabilizing

Nitrogen as an inert gas displaces the air from the packaging to prevent oxidation of the product and is often used as a so-called support gas to prevent the vacuum effect when using carbon dioxide. In the case of certain tubular bag packaging, for example chips or other sensitive products, it serves to protect against loss of flavor and as transport protection.

 

Oxygen - maintains freshness

In most products, attempts are made to reduce the residual oxygen content to a minimum. The rule of thumb is that the lower the better for durability. An exception is made for products such as raw meat or salads. In the case of raw meat, the oxygen supports the red coloration by the myoglobin, the meat appears fresher. With salads, cell respiration is supported, the salad does not wilt and looks fresher.

 

Argon - prevents enzyme reactions

Argon is used to inhibit enzymatic reactions. It can competitively inhibit enzymes that convert oxygen in the enzymatic reaction or oxygen oxidation. For example, the oxidation of polyphenols in the salad can be partially prevented so that interfaces do not turn brown, the product looks fresher and therefore more appealing.

Applications

Fresh food that cannot be sold will be returned to the manufacturer or destroyed. The use of protective atmospheres supports the extension of shelf life while at the same time optimizing the shape, freshness and aromas.
By using protective atmospheres, the shelf life can sometimes be extended by weeks and are therefore available to the customer for longer.

Protective atmospheres are also used in medical and pharmaceutical technology, for example when filling and storing active ingredients that are sensitive to oxidation.

Optical oxygen analyzer for sample measurement

 

AtmoCheck® OPTIC O2 is a laboratory analyzer for random checks of residual oxygen concentrations. The modern and progressive O2 measurement, with an optical oxygen sensor, provides reliable and fast, highly accurate results from, for example, gas-protected food packaging or very small blister packs.
